Palak Vegetable Momos

From the regions of Sikkim and Darjeeling, we bring to you momos with a touch of green. Momos are steamed flour dumplings that are stuffed with a vegetable mixture and served with the traditional momo chutney.

  • Boil the spinach and puree to a fine paste.
  • Taking a bowl, mix the rice flour with a little bit of the spinach puree, 30 ml of oil and salt as required.
  • Add spinach puree as required to make a smooth dough. Cover and let rest for an hour.
  • Meanwhile, heat a pan with the rest of the oil and fry all the vegetables. Add salt once it is cooked halfway and set aside.
  • When it’s time to assemble the momos, fill a steamer with water. If you don’t have one, use an idli stand to place the momos inside a pressure cooker.
  • Taking the dough, separate into roundels the size of golf balls. Roll it out, stuff with the vegetable mixture and pleat into a momo shape.
  • Steam for 40-50 minutes and serve with the traditional momo chilli sauce.
